This has been a holiday favorite in my house for years and years. This is the one holiday food that transcends all meals - breakfast, lunch, and dinner! Although the rolls are best hot out of the oven, they re-heat very well. My whole family loves to have them cut in half and toasted for breakfast. You may want to double this recipe to feed a large group of people, but make 2 batches, don't try to make it all in 1 batch.
Ingredients
1-cup mashed potatoes
2-sticks of margarine
3-eggs
7-cups flour
1 1/2-t salt
1-cup sugar1 package dry yeast
1 1/2-cups lukewarm water
Directions
Mix the yeast and lukewarm water and set aside. Mix the potatoes, margarine, eggs, salt, and sugar. Slowly add the flour and water/yeast solution using a mixer (I've heard that a Kitchen Aid works well, but I wouldn't know - hint, hint for Santa). Place the mixture into a greased bowl. Cover the bowl with a cold, damp cloth and place in the refrigerator until ready to use. If it's going to be a while, you can even place the mixture into large, greased Ziploc bags.
Roll 1/4" thick and cut. Butter the tops and let raise.
Bake at 450° for 10 minutes. When they are fresh out of the oven, butter the tops again if your cholesterol can handle it.
Best served piping hot with MORE melted butter or margarine.
